Actualy engine and mem clock need to be in a sort of harmony.
I always get the max out of the engine clock and then playing with the mem clock (25-50MHz steps). For example my XFX 7850 gets more hashes on 975/1250 as on 975/1350 (330 vs 310). The Club3D 7850 runs on 1050/1350 at 385, so it also depends on the card - you will need to play a little bit around with the settings to get the max out of the cards.
PS: XFX 1.075V ~80°C 85% fan, Club3D 1.138V ~75°C 50-60% fan
